Gluten Free in Kingman AZ

 This post is going to be off topic and be about my health journey (some of), but before I start, I do not hold my rats to any part of my diet. They get rat blocks all the time and once a day they are fed the Shunamite Diet with the addition of fresh foods (eggs, fruits, veggies, etc.) If I was to become vegetarian tomorrow, I would not make my rats (well maybe the Harleys) or my dogs be vegetarian. However, the only thing in this house that is vegetarian is the tortoise. ๐Ÿ˜Š

A little over a year ago I read some article about the power of food, which I always knew but I thought I knew what a healthy diet was. After all I have taken classes, I have done research, etc. What I didn’t know was that some of us don’t fit the mold of being just like everyone else. I decided to try an elimination diet, which was a pain in the rear.  I did three months of a very limited diet removing all the possible allergens, inflammatory foods, etc. I was quite annoyed and excited at the same time. I dropped 40 pounds in the first two months then quickly lost. (For my height I should weigh between 110-165 and I weighed in at 220.) I was very excited about the weight loss, but the diet would not be long term sustainable, and I missed food.

I learned that I am not tolerant to gluten, and I have a slight allergy to corn (corn, who the heck is allergic to corn?). What happens when I have gluten is not something you want to hear about, but I will say I have to live in the bathroom. Corn gives me a rash, mostly on my chest. I tried to live without both and while I felt good, that was also not sustainable as while I get that limiting processed food is good for us, unless I went back to being a stay-at-home mother, I don’t have time to make food that I like. So, I reintroduced corn, as it is a livable reaction.

I have since been diagnosed with Hashimoto’s, and therefore they would have suggested I avoid gluten there as well. I knew I had a thyroid issue, and I have been on meds for a few years for that. However, the doctor I was seeing didn’t test me for Hashi’s because “the treatment is the same.”  That is the wrong attitude. The diet is different, you are more at risk for other autoimmune diseases, etc. So I changed doctors.

Okay, so I got a little off track. I wanted to talk about the gluten, not my entire history. Back to the gluten. I love to eat out as a treat, this was my favorite thing for date night, I think that goes back to being the stay-at-home (and sometimes working) mom that cooked every day. I rarely WANT to cook anymore. I have found so many menus with gluten free items (here is looking at Denny’s, Cullivers, iHop, and some local spots no one would know about.) I found most of the time I didn’t get sick, but sometimes I did.  I decided it was not worth it. Being sick like that (sometimes it took a couple of days to recover).  I quit eating out. However, then I found a local place (Keto-Keto Carnivore) and I remembered that one place asked me if I was doing no gluten because of preference or allergy (Five Guys).

I love them both. Sometimes I wish the Keto place was just gluten free instead of Keto (almond flour isn’t my favorite alternative) but it is still a nice treat to have bread products that I don’t have to make. Also, their breakfasts are amazing, even if you aren’t gluten free. So long story short, if you are gluten free in Kingman AZ because you want to be, you have lots of options for gluten free food. If you are gluten free because of an issue I recommend limiting yourself to Five Guys and Keto-Keto Carnivore.
